Hi All
I've decided to seek my fortune (!) on the beaches around the North Island, but I've been looking for the law surrounding the use of a metal detector and can't find too much info, any help would be much appreciated.

You're fine on beaches, you'll need permission for private land.
Doc land / parks reserves are usually okay, as are urban parks. Just keep a low profile and don't go digging and huge holes & always fill your holes.
Some urban parks are historic (over 100 years of use); a no go. Also sports grounds also dislike people digging them up for obvious reasons.
If anyone confronts you, be pleasant and show them the junk you've dug up. Tell them that you're cleaning up the land, and you'll usually be all good.
Mining claimed land is probably not much of a problem in the North Island, especially since you're seeking coins/relics?

Beaches are usually safe, easy digging and a good way to build up detecting confidence.
